Eat your Veggies

I know I'm a bit late to the resolution bandwagon ... but after a few weeks of being sick I'm ready to seriously get serious about eating healthy. More veggies please. I just need to get creative and resourceful since grocery shopping and keeping fresh food in the house has never been my strength.

This roasted cabbage looks simple and delicious enough to start with. Wish me luck! 


  1. frozen veggies then you won't have to worry about throwing out fresh ones. it's a trade off but it's better than no veggies!


  2. Totally agree M! And frozen cut up veggies can save time too :) good suggestion.

  3. I love steamed red cabbage with sesame seeds, soy sauce and wasabi. So good!

  5. do you do kale? it's my new favorite vegetable. buy pre-chopped at tjoes and toss with a little olive oil and some sea salt and toast in the oven until crispy - kale chips. totally fills the void of potato chips.

  6. actually never had kale... never knew what to do with it... but this sounds amazing and delicious! I'll have to give it a try :) thanks!
